A chance to relax out-of-doors and unwind from the days work is really what summer is all about here in Iowa. It’s also the perfect opportunity to gather with friends and neighbors in for a casual al fresco dinner. On the scorcher days of summer, you’d be silly to turn on your oven or stress about dinner. Our favorite source of inspiration around here, Bon Appetit, has been spot on lately. Highlighting our favorite recipes and ideas from recent issues, we’ve pulled together dinner from the market in minimal time without compromising taste, quality, or health. Here’s how you can keep up with Jones’ AND invite them for dinner.
Maybe you think sandwiches are too casual for even a casual weeknight meet-up with friends. WRONG. The bright colors of these Smoked Salmon sandwiches, served open-faced, create a striking visual display when given the chance.
Crisp greens right from our salad bar tossed with a few add-ins and one of our signature house-made dressings make the perfect companion to your sandwiches.
Don’t worry! We can handle dessert, too. Ice cream is a summer staple and here at the Market we’ve got plenty of house-made options. Grab a pint of Bread Garden Market Gourmet Chocolate Ice Cream and some fresh, seasonal berries. Serve ice cream in bowls topped with sliced berries and drizzle with chocolate syrup.
Smoked Salmon Smorrebrod
Horseradish Sour Cream:
1/2 cup sour cream
1 tablespoon horseradish
1 teaspoon fresh dill, chopped
1 teaspoon fresh flat-leaf parsley, chopped
1 teaspoon fresh lemon juice
Whisk ingredients together in a small bowl
4 slices rye or pumpernickel bread
8 ounces sliced smoked salmon
2 radishes, thinly sliced
2 tablespoons salmon or trout roe (optional)
Dill sprigs and flat-leaf parsley leaves
Nice additions/variations include capers and olives. You could even try crispy onions and roast beef in place of the salmon and radishes.
