1 cup sugar
6 whole cloves
1 stick cinnamon
3 bay leaves
whole nutmeg, for grating
1 vanilla bean, halved lengthways
2 star anise pods
2 bottles Chianti or other Italian red wine
Using a Y peeler, remove large sections of rind from your citrus fruit. Pour the sugar in a large saucepan over a medium heat, add the pieces of rind and squeeze clementine juice into pot as well. Add the spices: cloves, cinnamon stick, bay leaves and about 10 to 12 gratings of nutmeg. Add the vanilla bean to the mix along with a good splash of red wine; just enough to cover the sugar.
Let mixture simmer until the sugar has completely dissolved into the red wine, stirring gently to encourage. Once sugar is dissolved, bring the mixture to a boil. Continue at a rolling boil for about 4 to 5 minutes until a beautiful thick syrup has formed.
Once the syrup has come together, lower the heat and add your star anise along with the rest of the wine. Using a low setting, gently heat the wine. When it's warm, ladle it into glasses and serve.
