Market Makes : Plantain Chips

serves 4

2 plantains, peeled
1/2 cup coconut oil, melted
coarse kosher salt

To peel plantains, start by slicing off both ends. Score the plantain skin lengthwise in several places and peel. If the skins are troublesome, soak the scored plantains in hot water for a few minutes before trying again. Use a vegetable peeler to remove any trouble bits. Cut the plantains diagonally into thin slices.

Heat coconut oil in a large skillet over medium heat until melted. Place plantain chips in pan making sure not to crowd them. You’ll know your oil is the correct temperature if your slices sizzle a little bit.

Fry chips two minutes or less per side. Chips should be a nice golden color with a bit of brown around the edges. Remove chips from pan and place on paper towels to drain. Salt immediately.
