Winter was a dream, right? And no, we don't mean a dream come true. More like a "did-it-really-happen" type of dream. In any case, this Spring weather has us inspired to incorporate fresh produce into a crunchy cabbage salad to eat outside. Here's how we're doin' it:
1 cup peas, shelled
4 cups cabbage, shredded
1/2 cup radishes, thinly sliced
1 cup combined mint leaves and flat-leaf parsley, lightly chopped
1/4 cup grated Parmesan cheese
1/2 cup extra virgin olive oil
1/4 cup lemon juice
Whisk dressing ingredients together in a small bowl until combined. Season to taste with salt and pepper.
In a large bowl, combine salad ingredients and toss to distribute ingredients evenly. Add dressing and mix until cabbage softens a bit.
*for a more substantial dressing, substitute a pre-made buttermilk dressing instead.
