1 loaf panettone bread, paper removed
2 cups milk
1 teaspoon vanilla
1/4 teaspoon ground cinnamon
Grease a 9x13 baking pan with butter.
Slice panettone into 1 inch thick slices crosswise, and cut rounds into quarters. Overlapping slightly, lay bread into bottom of pan.
Whisk eggs, milk, vanilla, and cinnamon thoroughly. Pour mixture over slices making sure to cover all the pieces. Cover and let chill in fridge overnight.
Preheat oven to 350°F. Uncover baking dish and bake until just cooked through, puffed and golden brown, about 40 minutes. Set aside for 10 minutes to cool slightly before serving.
When serving, top with butter and high-quality maple syrup.
